" Tucked away in the Lincolnshire countryside this is an excellent friendly village place, with 3 real ales on hand pull along with Leffe on draught. Nice separation of eating and drinking so you don't feel either party is being imposed upon. Food is also top notch and worth visiting for in its own right (Steak and Guiness has to be tried!) The Castle Inn, in Castle Bytham, received a write up in the Peterborough
Evening Telegraph on Wednesday 17 September 2003.
At the time The Castle was owned and managed by Barbara Cooper who
took over when Gary and Jill Ward relocated to Greece. In the summer
of 2005 the pub changed hands again when Jonathan and Charlotte took
the pub on.
Described as being "welcoming, serving up a good selection of
beers in the lounge bar, and home-cooked dishes, including fish, steaks
and Sunday roasts in the restaurant" the full article is reproduced

People's Needs
Ramblers are among the many people who are attracted to The Castle
Inn, a country pub in the idyllic setting of Castle Bytham. The village,
situated about nine miles north of Stamford, is a central area for
popular walks, such as Morkery
Wood and the Yew
Tree Avenue in nearby Clipsham.
And the 300-year-old, stone-built pub provides a warm welcome for
everyone, including children and dogs. Owner Barbara Cooper sees to
it that everyone is greeted with a"hello" when they enter
The Castle Inn.
The lounge bar - a smoking area - features an open log, or coal, fire,
ideal for the cooler days ahead. It's where customers can enjoy a
"good beer", which is something Barbara is keen on providing,
and with a regular turnover or ales. Currently on offer are the "local"
brew known as The
Grain Store Cooking, Thwaites Bomber County and the Scottish Tiafial.
A selection of cocktails are available at the bar.
"We are also collecting ideas of cocktails from people"
said Barbara.
The lounge bar offers snacks, which can be eaten in the bar or in
the restaurant, and vice versa. A no smoking area, the recently decorated
restaurant caters for up to 40 diners who appreciate Barbara's home-cooked
dishes.
Key among these are fish courses, which includes the likes of swordfish,
halibut and sea bass. Steak dishes are also on the menu and by special
request, Barbara will prepare, for example beef Wellington.
There are also vegetarian and vegan offerings, and
should any diner suffer from gluten allergies, they will be easily
catered for.
Sunday lunches are traditional roasts, using English meat and, wherever
possible, locally-grown fresh fruit and vegetables. The roast beef
is cooked in wine or ale, while the roast pork is cooked with apricots,
almonds and sultanas; or strawberries and black pepper. The lamb is
minted with "secret seasonings".
Barbara is also keen on what she refers to as "good old English
grub", such as beef stew, dumplings and her special apple crumble.
Cheesecakes and lemon meringue pie are other choices on the desserts
front.
Decent quaffing house wines include styles from France, Italy and
the New World. Fitou, Merlot and Pinot Noir number among the reds,
Chardonnay and Chablis the whites, and the sparkling wines include
Tattinger, Lanson Black Label and a dry sparkling Chardonnay. "
